The temperature problem: why home ovens can't make real pizza
Neapolitan crust is a physics problem before it is a recipe problem. Here is what heat actually does to dough.

You can follow a perfect Naples dough recipe, ferment it for two days, use imported flour — and still pull a pale, biscuity disc out of a domestic oven. The recipe was never the problem. The oven simply cannot get hot enough, fast enough.
What high heat actually does
A proper pizza bake is a race. The crust must puff and set before the moisture in the dough cooks out and the toppings overcook. At pizzeria temperatures, that race finishes in a couple of minutes: steam inside the dough expands violently, the rim inflates, and the sugars and proteins on the surface char into the leopard spotting that defines the style.
A domestic oven runs far cooler, so the same dough spends fifteen minutes slowly drying. You get bread with sauce on it — pleasant, but not pizza.
Stored heat beats hot air
Air is a poor conductor. What actually cooks the base is stored heat in the stone, dumped into the dough the instant it lands. This is why a fully saturated stone matters more than the temperature reading on a dial, and why the second pizza often beats the first if you did not preheat long enough.
- Preheat until the stone is saturated, not just until the oven beeps.
- Stretch by hand and keep the rim untouched so gas stays in it.
- Keep toppings light — water is the enemy of a crisp base.
- Launch confidently; hesitation is how pizzas fold.
Why rotation matters
Any single heat source cooks unevenly, so traditional pizzaiolos turn the pizza constantly. Opening a home oven to do that dumps the heat you spent forty minutes building. The result is an even bake with charred spots rather than one burnt edge and one raw one — the difference between a pizza that looks homemade and one that looks like it came from a wood oven.
